Gut Happy 5-minute Gut loving Keto Bread
Keto, paleo, gluten free… call it what you want… but don’t forget it’s added Gut Happy-ness benefits!
Taking wheat, preservatives and all the added nasties out of bread is one thing but adding loads of gut loving goodness is just next level AMAZING!
This recipe is super simple and fast, and best of all, it produces a beautiful loaf that you can eat fresh from the oven or slice it and freeze it for the weeks ahead.
Ingredients
1 cup almond meal
¾ cup arrowroot flour
½ cup flaxseed meal (or LSA)
1/3 cup olive oil
4 medium eggs
2 Tbs pure maple syrup
2 tsp baking powder
125 ml warm water
Method
Preheat oven to 180 degrees Celsius
Place all ingredients into a blender, food processor or thermomix and blend on high for 20-30 seconds until well mixed.
Mixture should resemble a runny cake mix consistency.
Pour into a lined baking loaf tin approx. 24 x 13 x 7cm (or we used a silicone loaf tin and lightly greased it with oil prior to pouring batter in).
Bake in oven for 45 minutes (or until golden and firm to touch and when inserted with a wooden skewer it comes out clean).
Leave in loaf tin for 5-10 minutes to cool slightly.
Eat fresh from the oven with loads of organic butter… Our Favourite!
