Gut Happy collagen Choc muffins (sprinkled with flake)
Cold rainy weekends call for a comfort food baking session.
These muffins are loaded with good gut food, and Gut Happy approved ;)
*Unfortunately they are still a ‘sometimes’ food… but i won’t mind if my kids go back for seconds ;)
Ingredients
½ cup Gluten free plain flour
½ cup almond meal
½ cup Gluten free self raising flour
1 cup coconut sugar
1/2 cup cocoa powder
1 tsp baking powder
2 eggs
1 cup organic milk
1/2 cup butter melted
1/2 cup chocolate chips optional
1/4 tsp bicarbonate of soda
Method
Preheat oven to 180C. Grease a muffin pan.
In a cake mixer or blender add butter and sugar and blend on medium until well combined, light and fluffy.
Slowly add eggs one at a time, followed by milk, flours, almond meal, cocoa, baking powder, bicarbonate of soda, bone broth, collagen and PHGG.
Blend on medium until well combined.
Add chocolate chips (optional) and mix.
Spoon into prepared pan. Bake for 15-20 minutes or until cooked (insert a skewer into middle of the muffin, if cooked it will come out clean)
Transfer onto a wire rack to cool.
NOTES
*In this image, i omitted the choc chips, but sprinkled with a Flake before baking
Once cooled, muffins can be topped with chocolate flakes, chocolate chips, berries, ganache, coconut, peanut butter etc.
