Light & moist gut loving gluten free muffins that will leave you wanting more

 
 

Ingredients

  • 3 eggs

  • 1/2 cup almond or coconut milk

  • 1/4 cup maple syrup

  • 1/4 cup coconut sugar

  • 1 teaspoon vanilla extract

  • 2 carrots, shredded

  • 4cm knob ginger, grated

  • 1 cup almond meal

  • 1/2 cup coconut shreds

  • 1/4 cup chopped walnuts

  • 1 ¾ teaspoons baking powder

  • 1 ½ teaspoons ground cinnamon

  • 1 tsp mixed spice

  • 1 tbs Gut Happy PHGG prebiotic fibre (optional)

  • 1 Tbs Collagen Powder

 

Method

  1. Mix ingredients all together in a bowl or electric mixer on low.

  2. Place in lined muffin tin.

  3. Bake for 12-15 mins on 180 degree Celsius - or until inserted wooden skewer comes out clean.
