Hello to this Gut Happy gluten free, dairy free and Vegan frittata!

We love this gut friendly dish. 

It is dairy free, gluten free and vegan… plus it is loaded with chia seeds – which are a great alternative to eggs due their gelling agent, a good source of vegan protein as well as aiding in digestive/gut health, and with our added Gut Happy products this dish is a power house for ultimate Gut Happiness.

Ingredients

  • ½ medium cauliflower 

  • 1 Tbs A.M cleanse bone broth

  • 1 Tbs hot water

  • 1 Tbs olive oil or coconut oil

  • ¼ cup chia seeds

  • 125ml water

  • 1 medium zucchini, grated

  • handful of kale leaves, roughly chopped

  • 1 cup pumpkin, grated (approx. 200gms)

  • 1 Tbs Gut Happy Partially Hydrolyzed Guar Gum (PHGG)

  • 1/3 cup almond meal

  • 1 tsp dried (or fresh) mixed herbs

  • 1 tsp garlic powder

  • 1-2 tsp nutritional yeast

  • 1 Tbs pumpkin seeds

  • salt & pepper to taste

 

Method

  1. Combine chia seeds and 125ml water in a small bowl, stir occasionally, set aside to thicken

  2. Preheat oven to 180 Degrees celcius

  3. Line a 23 x 33 x 4cm baking tray with baking paper

  4. Mix bone broth and hot water in a small bowl until well mixed

  5. Add cauliflower to baking tray and coat in bone broth mix

  6. Drizzle oil over coated bone broth cauliflower

  7. Season to your liking and bake for 20 mins or until cauliflower is soft and golden

  8. Combine roasted cauliflower, kale, grated zucchini and pumpkin, garlic powder and herbs in a large bowl. Stir in thickened chia seed mixture, followed by PHGG and almond meal, until well combined.

  9. Season to your liking

  10. Spoon into lined baking tray, smooth surface with the back of a spoon or spatula.

  11. Sprinkle with nutritional yeast and pumpkin seeds

  12. Bake for 25-30 min or until mixture is golden and cooked through

  13. Remove from oven and allow to cool in tin for 5 minutes before slicing.

Serve hot or cold.
