The Gut Happy Gluten Free ABC to Z muffins (Apple, banana, Carrot & Zucchini)
Seriously this muffin is more like a complete meal for any member of the family! Loaded with ALL the goodness, and best yet, no one will know that they are eating ALL the fruit, veggies and good fats all at once!
Ingredients
1 small apple
1 ripe banana
1 small carrot
1 small zucchini
1 egg
¼ cup olive oil (or you can use coconut)
¼ cup maple syrup
1 cup almond meal
2 Tbs coconut flour
2 Tbs desiccated coconut
¼ tsp salt
1 tsp ground cinnamon
1 tsp ‘Populate’ Bone broth – optional
1 Tbs Gut Happy PHGG – optional
1 tsp gluten free baking powder
1 Tbs honey : to drizzle on top - optional
Method
Preheat oven to 180 degrees
Prepare muffin tin
Wash fruit and veggies
Place unpeeled apple, zucchini, and carrot along with peeled ripe banana into a food processor or Thermomix
Blend on medium speed until grated (can be grated by hand)
Place grated veggies & fruit into a strainer and squeeze out any excess juice.
Place back into food processor
Add remaining ingredients and mix well (medium speed for 5 seconds)
Pour batter into prepared muffin tin or silicone muffin tray
Fill ¾ of the way full with batter
Drizzle ¼ tsp honey on top of each muffin - optional
Bake for 15-20 mins, until a wooden skewer comes out clean and they are firm on top.
Serve with coconut yoghurt & fresh berries
