Gut Happy Gluten Free Puffed Quinoa and vegetable patties

Super quick and easy, add any veggie or bean that you prefer, and bon appetit!
Ingredients
1 can butter beans, rinsed and drained
1 Tbs hulled tahini
2 tsp curry powder
1 free range egg, lightly whisked
1 small onion, grated
1 small carrot, grated
6 cauliflower florets, chopped finely
2 spring onions, finely chopped
1 clove garlic, minced
2 cm fresh ginger, finely grated
1 cup puffed quinoa
1 tsp salt
½ tsp black pepper
1 tsp “A.M cleanse” bone broth
1 Tbs Gut Happy PHGG
Gevity RX BBQ sauce to serve
Method
Preheat oven to 180 degrees
Line a baking tray with baking paper
Combine butter beans, tahini, curry powder in a food processor, process until smooth.
Transfer to large bowl and fold in remaining ingredients
Mix well
Using wet hands, shape the mixture into palm sized patties
Place patties on prepared tray and bake for 30 minutes, until crisp and golden
Serve patties with your favourite Gevity RX bone broth sauce – we love the BBQ sauce! You can also top with smashed avo and tomato slices. YUM
