A super simple Gut Happy dairy free pesto that is so delicious you wouldn’t even know it’s not the real thing!

Here at Gut Happy we are obsessed with making our “super greens pesto”. This is a recipe that you can eat straight from the jar, trust us… we do it ALL the time.

Although we have provided you with a recipe, please don’t feel you need to stick to it. This recipe can easily be amended to add any nuts and seeds that you fancy. We even create “super greens pesto” using left overs in the fridge. So feel free to mix and match herbs and any greens you need using (baby spinach, spinach, zucchini etc). Get your creative juices flowing in the kitchen this week!

 
 

Ingredients

  • 1/4 head broccoli (6-8 florets)

  • 4 large kale leaves, removed from stem

  • 2-3 cloves garlic, minced

  • 2 handful basil leaves

  • small handful flat leaf parsley

  • 1/3 cup olive oil or macadamia nut oil

  • 2 tsp sea salt

  • pinch pepper

  • juice of 1/2 lemon

  • 3/4 cup walnuts 

  • 3/4 cup almonds

  • 1 Tbs Gut Happy Partially Hydrolyzed Guar Gum (good gut food)

 

Method

  1. Place all ingredients in a blender, besides walnuts and almonds, blend until finely chopped.

  2. Add walnuts and almonds and whizz for another minute or so until nuts are finely chopped

  3. Add a little more oil if needed, and make sure it is seasoned to your liking.

  4. Eat straight from the jar!

  5. Store in an air tight container in the fridge
